
BBQ chicken doesn't need to be hugely calorific, nor does it need to be high in sugar thanks to Care Free BBQ sauce. It makes an excellent low sugar alternative to a sauce, but also doubles up as a marinade for meat.
Ingredients:
- 150g chicken breast, sliced
- 1.5 tbsp Care Free BBQ sauce
- 2 tsp tomato puree
- 1/2 tsp cornflour
- 1/4 tsp garlic powder
- chilli puree or chilli flakes, to taste
Directions:
- Mix all of the marinade ingredients together in a bowl, then add the chicken. Ideally, cover with cling film and allow to sit for 30 minutes, although it can be cooked straight away.
- Heat a frying pan to high heat, add your oil of choice (spray oil works fine but rapeseed/coconut works best), add the marinated chicken and turn the heat down to medium. Turn once and fry until just cooked through. It is best to turn the heat off earlier than you think as the chicken will continue to cook in the residual heat of the pan, ensuring your chicken remains juicy and not dry.
- Add a tiny splash of water, just enough to pick up any left over marinade in the pan and use a spatula to coat the chicken.
