Blonde Chicks

Ingredients

Coconut oil
-
410g chickpeas
-
110g natural peanut butter
-
1 scoop Vanilla Whey
-
110g maple syrup or honey
-
1 tsp vanilla extract
-
1/2 tsp salt
-
1/4 tsp baking powder
-
1/4 tsp baking soda

60g dark chocolate
Instructions

Preheat oven to 180 degrees C

Base an 8”x8” pan with Coconut Oil.

Blend the chickpeas in a blender or food processor until smooth.

Add the peanut butter & blend until smooth.

Add the Whey, vanilla extract, maple syrup/honey, baking powder, baking soda and salt, and blend into a smooth, thick paste.

Break the dark chocolate into chunks, and mix into the batter.

Spread the mix evenly into the baking tray.

Bake for 20-25 minutes. The batter is ready when you can pierce it with a knife, and remove the knife without batter sticking.

Let the pan cool, before cutting the Blondie into 9 Blonde Chicks.

Place on a wire rack to cool.

Notes:
Any nut butter will do!
Add in extras if you choose, such as nuts or dried fruits.
Replace the dark chocolate for vegan chocolate for an entirely vegan-friendly recipe!
