Ingredients:

200g smooth peanut butter

60g brown sugar

2 tbsp maple syrup

1 tsp vanilla extract

2 large eggs

260g oats
-
60g vanilla protein powder
-
50g plain flour
-
1/2 teaspoon baking soda

150g dark chocolate
Method:
Preheat oven to 180 degrees celsius

Grease a baking tray with butter

Mix plain flour, Oats, & protein powder together in a mixing bowl.

In a separate bowl, mix the peanut butter, sugar & maple syrup, until there are no lumps.

Crack the two eggs into the peanut butter mixture, and stir in.

Add the oat mixture to the peanut butter mixture and stir until dough-like, (The dough will appear more wet than usual).

Add the vanilla extract & baking soda, and stir.

Cut the dark chocolate into small chunks, and fold into the mixture. (Large chunks will melt and be delicious, but will require larger portions.)

Roll the mixture into balls, approximately 1.5 inches in diameter.

Place evenly on baking tray, with room to spread.

Bake for 15-20 minutes, or until golden brown.

Cool on a rack, and enjoy!
