Top protein cookie recipes

When it comes to quick and delicious protein snacks, there is no better option, (in my opinion) than a protein cookie. They are quick to make, need minimal ingredients and taste great! 

 

Let’s take a look at some of my favourite protein cookie recipes that you can easily make yourself at home. 

 

Lemon Chia

 

Ingredients

 

  • 4 tablespoons oat flour

  • 1 tablespoon chia seeds

  • 2 scoops protein powder

  • ¼ teaspoon salt

  • 1 tablespoon of lemon zest

  • ¼ cup of lemon juice

  • 2 tablespoons of honey

  • 1 tablespoon of vanilla extract

  • A large egg

  • 2 tablespoons coconut oil

  • ¾ teaspoon baking powder

 

Directions

 

  1. Start by mixing the oat flour, protein powder, chia seeds, baking powder, salt and lemon zest in a bowl. 

  2. In another bowl, mix the coconut oil, egg, vanilla extract, honey and lemon juice. 

  3. Now, mix the wet and dry ingredients together until you have made your cookie dough. 

  4. Place the dough and spread it evenly on a non-stick baking tray. Cut out the shape of your cookies before placing in the oven. Bake them at 165C for around 12-15 minutes. 

 

White chocolate raspberry

 

Ingredients 

 

  • 28g of white chocolate

  • 1 teaspoon of vanilla extract

  • 120g rolled oats

  • 2 tablespoons of sweetener

  • 28g coconut flour

  • 84g of semi skimmed milk

  • 18g raspberry jam

  • 128g of peanut butter

  • 112g of protein powder

  • 1 cup of raspberries

 

 

 

 

Directions

 

  1. Chop up the white chocolate

  2. Using a large bowl, mix together the wet and dry ingredients to form your cookie dough.

  3. Once all mixed together, empty it onto a baking tray and form cookies from the dough.

  4. Once you have formed cookie shapes, with each cookie, make indents in the centre of each with your thumb. 

  5. Place in the oven for roughly 15 minutes or until cookies look golden. Bake on 170C. 

  6. Once the cookies are out and halve cooled for 5 minutes, place desired amount of raspberries in the indent you made previously. 

 

Peanut butter 

 

Ingredients

 

  • 3 tablespoons of mini chocolate chips

  • ½ cup of peanut butter

  • ¼ cup of brown sugar

  • ¼ cup of salt

  • 2 tablespoons of coconut flour

  • ½ cup of protein powder (I have found vanilla works best) 

  • 1 egg white (large) 

  • 1 large egg, whole

  • ¼ teaspoon of baking soda 

 

Directions 

 

  1. Preheat your oven to 350 degrees

  2. Line a baking tray with parchment paper 

  3. Using a medium bowl, mix together the peanut butter, sugar, egg, salt, egg white and the vanilla extract. The ingredients should be mixed well and completely blended. 

  4. Pour the baking soda over the top of the ingredients. 

  5. Mix in the protein powder and flour until it is well combined with the current mixture. 

  6. Once complete, pour in the chocolate chips and mix evenly. 

  7. The dough should be a little sticky but not mushy. If you want your dough to be a bit looser, pour little amounts of milk onto it. IF you need your dough a little bit firmer you can add more protein powder. 

  8. When you are happy with the consistency of the dough, you can mould it into cookie shapes and place onto the baking tray. You want the cookies to be fairly flat, as they will rise in the oven, not widen. 

  9. Bake them for 6-7 minutes. The edges of the cookies should be slightly golden. 

  10. Let the cookies cool for a further 5 minutes before consuming. They should have a slightly crispy outer layer whilst being nice and gooey in the middle!
